"Spaghetti" and Turkey Meatballs

  • 1 medium zucchini
  • 1 teaspoon extra virgin olive oil (or unsalted butter)
  • 1/2 teaspoon salt, or to taste
  • 1/2 teaspoon dried dill, optional
  • 20oz pkg Jennie-O Lean Ground Italian Turkey Sausage
  • 1 tablespoon oregano
  • 1 tablespoon parsley
  • 2 cloves minced garlic
  • 1/4 cup onions, chopped
  • 2 tablespoons whole wheat flour
  • 1 egg
  • pinch salt
  • pinch pepper
  • Prego Light Smart Spaghetti Sauce

Directions

Zucchini Pasta1.Cut the ends from each of the zucchinis and put the zucchini through a zucchini noodle maker.
2.Heat the olive oil or unsalted butter in a large pan.
3.Add the zucchini spaghetti, salt, pepper and dill. Quickly sauté´ the zucchini until crisp-tender (it will cook fast, in less than five minutes).
4.Taste and adjust the seasonings to your preference.
5.Serve twirled onto the plate (or continue with meat ball recipe).

Healthy Meatball Recipe
1. Pre-heat oven to 400 F.
2. In a medium bowl, mix all ingredients well.
3. Scoop meat balls onto a baking sheet sprayed with nonstick spray, should make 12 medium size meat balls.
4. Bake for 20-25 minutes or until golden brown, flipping half way through. Make sure they are cooked all the way through.
5. Add Prego and healthy meatballs to the zucchini pasta.

I have really hit the workouts hard the last week, making sure I get an hour of cardio a day as well as at least 15-20 minutes of strength training. Another workout I put together for my team:

On days when my knee is hurting, or I am sore and just don't feel like working out I could easily lay on the couch and skip my workout. But I have been persevering and going every day and I feel so much better!
